Erin go Bragh! It’s time for St. Patrick’s Day again, that time of year when everything turns green, not because it’s spring, but because it’s all gone Irish! To be sure, you’re going to want to attend the St. Patrick’s Day on Main Festival if you’re in Rock Hill on March 17th. But before you go, or maybe after, you might want to get into the spirit with these St. Patrick’s Day treats made with Sprite.
Leprechaun Punch
Each of these recipes is pretty simple. Sprite provides an easy base, and you build from there. For Leprechaun Punch, you’ll need Sprite and lime sherbet. And that’s it. See? Simple.
If you have a large punch bowl and are trying to serve a lot of people, mix up a bowl full with a two-liter of Sprite and a small tub of the sherbet. The sherbet will color the Sprite a vivid green and will add even more zesty lime to Sprite’s already delicious lemon-lime flavor. The Sprite adds the sparkle!
If you’re serving fewer people, or if you want each serving to look more interesting, use medium-sized clear cups. Add a scoop of the lime sherbet to each cup, then fill with Sprite.
Freeze the Green
If you really want to go green with your drinks, make up a batch of green ice cubes. This option is ideal if you’re serving only a few people and you’ll be serving your Sprite in tall glasses.
Fill an ice cube tray with water, then add a drop or two of green food coloring to each compartment of the tray. Let the tray freeze for a few hours. Pop the ice cubes into your glasses, then fill with Sprite. The green ice cubes will glitter in the Sprite!
If you want to get really fancy with your green ice cubes, invest in a spherical ice tray. Add colored water to the tray, then serve three balls to a glass. The ice will remind your guests of a three-leaf shamrock. Obviously you’ll either need to start preparing the ice well in advance of your gathering, or you’ll need to get several trays.
St. Patrick’s Day Cupcakes with Shamrock Frosting
The cupcakes are a bit more involved than the drinks, but are still made simple by the use of Sprite.
Ingredients
1 box lemon cake mix
12 oz. Sprite
Green food coloring
White frosting
Green decorative icing
Directions
Simply substitute the Sprite for everything except the cake mix. Add a few drops of green food coloring to the batter. Cook according to the box directions for cupcakes. Be sure to use fun or fancy cupcake cups in your pan.
When the cupcakes come out of the oven, allow them to cool. Add the white frosting, letting a little of the green cake show around the edge. Decorate the top of the white frosting with a green shamrock. If you’re feeling the luck o’ the Irish, add a fourth leaf!
