Multi-cooker Barbecue Baby Back Ribs

Did everyone get a multi-cooker for Christmas, or was it just us? Whatever the case, we’re on the lookout for quick and easy recipes to make the new year that much simpler. Coke (and other Rock Hill Coca-Cola Bottling Company products) has always been a staple in the time-saver’s kitchen. Now it can help that much more in the quick multi-cooker. With Coke as the steam generator, you’re going to love these Multi-cooker Ribs.

Ingredients

  • 2 tbsp kosher salt
  • 2 tsp black pepper
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp chili powder
  • 2 tbsp brown sugar
  • 1-2 racks baby back ribs
  • 12 oz Coca-Cola
  • ½ tsp liquid smoke
  • 1 c bbq sauce

Equipment

  • 6 quart multi-cooker
  • wire trivet

Directions

Dry Rub

Combine salt, pepper, garlic powder, onion powder, chili powder, and brown sugar in a bowl.

Prepare Ribs

If necessary, remove membrane. Evenly cover ribs with the dry rub. Place on a tray at room temperature for 15-30 minutes. For a more fully developed flavor, coat the ribs the night before. Wrap tightly in plastic wrap and refrigerate overnight. Allow to stand at room temperature for 30 minutes before cooking.

Multi-cooker

Place metal trivet in bottom of multi-cooker.

Add Coke and liquid smoke to the multi-cooker.

Wrap prepared ribs around the inside of the multi-cooker pot, meaty side facing out.

Fasten lid and close vent.

Cook on high pressure for 25 minutes. Depending on your model of multi-cooker, you might also need to choose additional settings. Follow the manufacturers guidelines. If you’re using larger spare ribs, increase cooking time 5-10 minutes.

After cooking time has elapsed allow the multi-cooker to naturally release pressure for 15 minutes. Manually release remaining pressure.

Remove ribs from the multi-cooker. Brush with your favorite barbecue sauce, saving some for serving.

If you want a crisper outside, before adding sauce, place them on a baking sheet and broil them for a few minutes. Remove the ribs from the oven and allow to cool slightly before adding barbecue sauce.
