With a new year coming on quickly, it’s time for a new recipe using Coca-Cola products. This Slow Cooker Coke Chicken recipe combines the sweetness of Coca-Cola with savory flavors for a tasty dish. You’ll be making this one all winter long, experimenting with the noodles and the rice. Start with plain white rice, then move on to ramen noodles. Next…who knows? You can also play around with additional vegetables. To keep it simple and fast, microwave steam the veggies just as the chicken is finishing in the slow cooker, then toss everything together before serving it all on the rice.
- 4-6 boneless, skinless chicken thighs
- Salt and pepper to taste
- 1 cup Coca-Cola
- ½ cup ketchup
- ¼ cup soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon cornstarch
- Green onions, sliced thin on the bias, for garnish
- Sesame seeds, for garnish
- Cooked rice or noodles, for serving
Season the Chicken
Pat the chicken thighs dry with a paper towel. Season chicken thighs with salt and pepper.
Place in Slow Cooker
Arrange the chicken thighs in the slow cooker. Spread them evenly around the bottom of the pot.
In a medium mixing bowl, combine the Coca-Cola, ketchup, soy sauce, minced garlic, and grated ginger.
Pour Sauce Over Chicken
Pour the sauce mixture over the chicken in the slow cooker, taking care to cover each thigh.
Cover and cook on low heat for 4-6 hours or until the chicken is cooked through and tender.
For a thicker sauce, mix cornstarch with a little water to create a slurry. Stir the slurry into the slow cooker during the last 30 minutes of cooking.
Serve the Slow Cooker Coke Chicken over cooked rice or noodles. Add vegetables at this stage. Be sure to scoop up plenty of the Coke sauce.
Garnish with sliced green onions and sesame seeds before serving.
The Coca-Cola adds a unique sweetness to the savory sauce, creating a delicious balance of flavors. This dish pairs well with rice or noodles and can be complemented with steamed vegetables. Enjoy your Slow Cooker Coke Chicken!
