Super Easy Strawberry Pie with Sprite

The strawberries keep rolling in around Rock Hill this season, giving fruit-lovers a great opportunity to make a super easy and delicious strawberry pie. This no bake strawberry pie takes only a few ingredients, including Sprite, and will be just the right bright, fresh dessert for your next backyard cookout.

Ingredients

  • 1 ½ to 2 cups fresh strawberries
  • 1 cup Sprite
  • ¾ cup sugar
  • 3 oz package strawberry gelatin
  • 4 tbsp cornstarch
  • graham cracker pie crust
  • whipped topping

How to Make the Strawberry Pie

Sprite and Cornstarch

In a medium saucepan, mix the Sprite and cornstarch. Stir until all of the lumps in the cornstarch are gone. Once the mixture is smooth, heat it on medium-high.

Sugar and Gelatin

Add the sugar and gelatin to the mixture, stirring constantly to dissolve. Continue to heat until the mixture reaches a simmer. Stir until the mixture is clear and slightly thickened. Be careful not to let the mixture get too thick at this point or your pie filling will be too dense and rubbery.

Cool It

Once the filling mixture is slightly thick and clear, remove the saucepan from the heat. Allow the filling mixture to cool at room temperature.

Prep the Berries

As the filling mixture cools, prepare the strawberries. Wash the strawberries well. Remove the tops and slice to the desired size. Depending on the size of the strawberries, you will want to quarter or chop them. Larger berries probably need to be cut further. The size of the strawberry chunks is up to you, but larger pieces tend to lead to unwieldy strawberry pie slices.

Strawberries and Crust

Add the chopped strawberries to the graham cracker crust. Spread them evenly around the bottom of the crust. An even layer will produce a smoother top on the finished strawberry pie.

Add the Filling

Pour the cooled filling mixture over the strawberries. Be sure that the mixture is cool enough to avoid slightly cooking the strawberries and making them soft.

Really Cool It

Refrigerate the strawberry pie for a few hours until it is cool and thick. 

Top It

Once the strawberry pie has cooled and set, add the whipped topping. You can either top the entire pie or add a large dollop to each slice.
