Coca-Cola Glazed Meatloaf

Meatloaf
- 2 pounds lean ground beef
- 1 cup breadcrumbs
- 2 large eggs
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Coca-Cola Glaze
- ¾ cup Coca-Cola
- ½ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
Directions
- Preheat your oven to 350°F.
- In a large bowl, combine all of the meatloaf ingredients. Mix gently until everything is evenly incorporated, being careful not to overwork the meat.
- Shape the mixture into a loaf and place it in a lightly greased baking dish or on a parchment-lined baking sheet.
- In a small saucepan over medium heat, combine the Coca-Cola, ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Simmer for about 10 minutes, stirring occasionally, until the glaze thickens slightly.
- Brush about one-third of the glaze over the meatloaf.
- Bake for 45 minutes.
- Remove the meatloaf from the oven and brush on another generous layer of glaze.
- Return to the oven and bake for an additional 15–20 minutes, or until the internal temperature reaches 160°F.
- Let the meatloaf rest for 10 minutes before slicing.
