It’s almost July 4th, and that means three things: 1. It’s gonna be hot, hot, hot in Rock Hill; 2. Folks will be celebrating Independence Day; and 3. Everyone will want an All American frozen treat for the hot summer holiday.
There’s not much more American than Coke, and a good old-fashioned Coke float with vanilla ice cream and a bright red cherry makes it even more appropriate for the 4th of July. Freezing the float will give you a cold and delicious party treat.
Ingredients and Equipment
Note: The amounts that you need will vary according to the size and shape of your frozen treat forms.
- Vanilla ice cream
- Coke
- Maraschino cherries
- Frozen treat form (or several 3-4 oz. paper cups and sticks)

Flat Coke?
Well before you get started on the frozen treats, let the Coke go flat. Too much fizz in the Coke will lead to a soft consistency in the frozen treats. The best way to let out the fizz is to pour the Coke into a cup and leave it uncovered in the refrigerator for a few hours. The Coke will still be cold when adding it to the frozen treat forms.
Build the Treats
Add a spoonful of ice cream to the bottom of each frozen treat form. The ice cream should fill roughly 1/3 of the form (or cup).
Place a cherry in each form, pressing the cherry lightly into the ice cream. Be sure to drain the excess cherry juice. Too much cherry juice will overwhelm the Coke float flavor.
Carefully pour the cold, flat Coke over the cherry and ice cream in each frozen treat mold. Fill the molds slightly more than halfway.
Add one more spoonful of ice cream to the top of each frozen treat mold. Be sure to leave room for the treat to expand as it freezes. If you think that your treats will be too small, splash a bit more Coke on the top.
Freeze!
Add a stick to each mold. Gently place the molds in the freezer on a level shelf.
The treats will be ready in a few hours, just in time to enjoy as you watch the fireworks fly!
