With all the events happening in around Rock Hill during the month of April (for more information click here and here), there’s little time left for cooking. That’s why a slow cooker recipe is always a good go-to solution for meal prep on a hectic schedule. This recipe for Slow Cooker Coca-Cola Roast is super simple and can feed a crowd of hungry event-goers.
Ingredients for Slow Cooker Coca-Cola Roast
- 1 beef roast (a 2½ lb roast is usually enough for a family)
- 10.5 oz. can cream of mushroom soup
- 1 package dry onion soup mix
- ¼ lb mushrooms, scrubbed and sliced ¼”
- 1 lb carrots, scrubbed and cut into 1” chunks
- 1 lb red potatoes, scrubbed and quartered
- 12 oz. can of Coca-Cola (or 1½ cups if you’re using a 2 liter)
Directions for Slow Cooker Coca-Cola Roast
Mix the Liquids
In a medium mixing bowl, combine the mushroom soup mix and the can of Coke. Set aside.
Prep the Roast
Pat the roast dry using paper towels. Sprinkle the onion soup mix over the roast, rubbing it into the meat gently. Do this step over a tray so that you can add any extra soup mix to the mushroom soup and Coke mixture.
Add Everything to the Slow Cooker
First put the roast in the center of the slow cooker. Place the quartered red potatoes and the carrot chunks evenly around the sides of the roast. Carefully pour the mushroom soup and Coke mixture over the center of the roast.
Set It to Cook
Now for the easy part. Put the lid on the slow cooker. Set the temperature to low. Cook for 6-8 hours. The longer the roast cooks the more tender it will be. Do not remove the lid. Serve with Gravy
Once you’re ready to serve, dish the roast and the vegetables onto a serving platter (or just serve from the slow cooker. The liquid in the pot will make a fantastic gravy.
